My older daughter recently moved to Chicago, close in terms of cell phones and emails, but too far away for regular visits and family dinners. I miss her more than I can put into words so, what would any mother do, I prepared a few of her favorite meals when she came home for a brief preholiday visit. This is an odd assortment of recipes, but all family favorites, and I want to share them over the next week or two. There are people to visit, shopping to catch up on, and lots of chatting in the early mornings and evenings so recipes that are easy to prepare and last a day or two are the best choices. I’ve tried so many cheese soup recipes and this is our favorite. It goes together in a few minutes and has a rich, cheesy flavor without being too rich.
Cheddar Broccoli Soup
- 1/2 cup finely chopped onion
- 1/4 cup butter
- 1/4 cup flour
- 1 teaspoon chicken base if you have it
- 2 cups whole milk
- 3 cups chicken stock
- 2 cups medium cheddar cheese, grated. I prefer Tillamook cheddar
- 1 pound steamed broccoli, cut into a large chop
Saute onions in butter till tender. Add flour and cook a couple of minutes. Add milk and chicken broth, stirring constantly until thickened. I start with 3 cups of broth and add more if the soup gets too thick. Season with salt, pepper and a dash of cayenne pepper. Add grated cheese and stir until melted. Add broccoli and stir. Add a dash of paprika for a little color. You could add some diced chicken if you like, but I think it is great just this way. I serve this with toasted slices of buttered french bread that can be dipped into the soup. So good.
