Greek Chicken Pasta Salad

It looks like we are finally getting a weather break and the temperature will be in the 70′s for the next few days instead of the 90′s that we endured this past week. Way too hot for this native Oregonian.   My daughter, who lives in Chicago, is here visiting, so I’ve gotten a little behind in my blogging activities.  When she comes to visit I always make her favorite meals, and the recipe she looks forward to most is this delicious Mediterranean salad.  It’s a hearty meal and the flavor is even better the next day.  I served it last night with grilled corn on the cob that I brushed with a mix of melted butter and spicy peach pepper jelly after it came off the grill.  Mm, mm good.  I hope you will try it.
Greek Chicken Pasta Salad
1 pound boneless chicken breasts
1/3 cup olive oil
3 tablespoons lemon juice
1 clove garlic, minced
2 teaspoons dried oregano
Salt and Pepper to taste
8 ounces bow tie pasta, cooked al dente
8 ounces feta cheese, crumbled
3 medium tomatoes, seeded and chopped
1/2 cup kalamata olives, sliced
1/2 cup fresh parsley, chopped
1/4 cup pine nuts, roasted
Vinaigrette:
1/4 cup olive oil
3 tablespoons lemon juice
1 clove garlic, minced
1/4 teaspoon hot sauce
1 tablespoon oregano
Salt and Pepper to taste
Mix vinaigrette ingredients together and set aside.
Marinate chicken for 20 minutes to 2 hours in the olive oil, lemon juice, garlic, oregano, salt and pepper.  Remove from marinade and bake 30 minutes at 325 degrees.  Cool and shred.
Combine chicken with remaining salad ingredients.  Fold in vinaigrette and serve at room temperature with grilled pita wedges.
Can you imagine, we are going into the second half of August ~ Summer is almost over.

Sounds delicious and I love having a salad that improves with age! The corn basted with the jelly is a great idea!! Enjoy the visit with your daughter!

Yes, I definitely will try this. This is my kind of meal..all of the flavors that I love. Interesting putting hot sauce in vinaigrette. That sounds very good.

I cannot believe summer is almost over either. I always hate to see it go, but I do look forward to the fall, though:)

Isn't it fun to cook for our kids when they come home to visit? One of their favorites is Kraft Mac and Cheese with tuna and peas…go figure!

This looks delicious! I'm always looking for new ways to serve chicken- this salad will be perfect. I also like the sound of that corn glazed with spicy jelly and butter. I'm going to have to try that too! (I have a lovely apricot/habanero jam that I think would work perfectly!) One of my boys lives in Chicago- haven't seen him since January, but hope to soon!

Enjoy the time with your daughter and making her favorite things! This looks like a wonderful salad and so pretty. Those 90s were no fun here in the Midwest either. It has cooled off but we still have squadrons of mosquitoes to deal with!

Another masterful pasta dish. You have a great talent and I'd love to sit in your kitchen and watch you cook. Then of course eat. Spicy peach pepper jelly? Yeah, that'll work. May your visit with daughter be all that you want it to be.

I like chicken, I like pasta salad, I like Greek – hummm, perhaps I should try this, it sounds delicious. We're getting a weather break here as well – it's down to the low 90's today – but fall's a comin.

Mmmm, this looks delicious and I'd love some right now. I haven't had lunch yet and your salad would be a special treat. I'll be making this soon!
We had 2 days that stayed in the 80's, but now it's back to the mid and upper 90's. :(
At least it's not 100 again.

Fabulous summer salad, Cathy. Love all of the ingredients. And that peach pepper jelly on corn on the cob? Wow! Have fun with your daughter. I just spent almost 4 weeks with mine!
