Mediterranean Chicken Pasta Salad for some Very Special Guests

Greek Chicken Pasta Salad

My daughter and her family will be arriving this Friday for a long awaited visit and my kitchen is working overtime this week getting ready for their arrival.  My great-grandson was two months old the last time I saw him and he is now a six month old, very happy and active baby his great-grandma is dying to hold.  I’m cooking and baking special recipes I know they enjoy and like to get as much done ahead of time so I have time to relax and enjoy their company.

I’ve posted this Chicken Pasta Salad recipe in the past but I’m making it again and thought it would be a good idea to repost it because it’s such a favorite in my family and so darn good.  It makes lots and is great the next day for snacks and lunches.  Serve it with grilled pita wedges and hummus.

Mediterranean Chicken Pasta Salad
 
 

Ingredients
  • SALAD:
  • 1 pound boneless chicken breasts
  • ⅓ cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2 teaspoons dried oregano
  • Salt and Pepper to taste
  • 8 ounces bow tie pasta, cooked al dente
  • 8 ounces feta cheese, crumbled
  • 3 medium tomatoes, seeded and chopped
  • ½ cup kalamata olives, sliced
  • ½ cup fresh parsley, chopped
  • ¼ cup pine nuts, roasted
  • VINAIGRETTE:
  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • ¼ teaspoon hot sauce
  • 1 tablespoon oregano
  • Salt and Pepper to taste

Instructions
  1. Mix vinaigrette ingredients together and set aside.
  2. Marinate chicken for 20 minutes to 2 hours in the olive oil, lemon juice, garlic, oregano, salt and pepper. Remove from marinade and bake 30 minutes at 325 degrees or grill on a hot grill. Cool and shred.
  3. Combine chicken with remaining salad ingredients. Fold in vinaigrette and serve at room temperature with grilled pita wedges.

 

We love potatoes in any way, shape or form and this Potato, Walla Walla Onion and Gruyere Galette is at the top of our list.  It’s delicious with grilled steaks, salmon, chicken or pork tenderloin and can be made ahead and rewarmed. It goes together easily and always gets plenty of oooh’s and aaah’s when I serve it.

Chocolate chip cookies are everybody’s favorite and I want to have plenty on hand for snacks and dessert.  David Lebovitz’s recipe is my hands-down favorite cookie recipe and I’m making several batches to get us through the coming week.  The dough is formed into logs and wrapped in plastic wrap so I can bake just what we will eat each day and bake up a new batch each morning so they have that “just out of the oven” texture and flavor.  My mouth is watering just thinking about these fabulous cookies.

Look at your wonderful new site and that delicious food! How I have missed you. I think I’m all joined up now. I clicked on that thingy, but I’m not sure what that means. I’m a techno klutz. ;-)

It’s been a llllllllooooooooonnnnnnnggggg few months, but I’m hoping we have at long last turned a corner where I can see daylight. I have really missed you and my other blogging friends. I’m trying to take this slow, but you know, that’s not me because I want to race around and visit. This old dog has got to learn some new tricks. ;-)

How special these people will feel when you feed them all these WONDERFUL sounding foods! I am anxious to try each & every one of them, Cathy.
I was planning on making the Southern Living choc. chip cookies for DH’s golf group but now you’ve convinced me to do your/David’s recipe instead.

That pasta salad is calling my name right now. I can almost taste it, with all those delicious ingredients. Yummo!!

Hey, Cathy!
The photo of your chicken pasta salad has me craving it now! It sounds (and of course looks) divine! And your potato gallette has me eager to try something I have never had before:) Finally, I just can’t bring myself to talk about the cookies …there are no words to describe a perfect cookie!

Love these recipes, Cathy! I have been making lots of Greek style dishes due to an over-purchase of feta cheese when my daughter visited last month. (what a fun and frenzied month of planning menus – I love it!) Can’t wait to try the Greek pasta and that beautiful galette. Have fun!
