An Easy Midweek Dinner – Pizza Pie

Whew, what a busy week.  Daughter and family arrive tomorrow and I’m preparing for Saturday’s farmers’ market.   As long as I have a well stocked fridge and freezer I’ll be set for whatever happens.   The most important thing on the agenda is taking a five generation photograph of our family.  My mother was born in 1922 and my great-grandson was born on Valentine’s Day this year and this picture will be something we all treasure.  Cookies made, cakes baked, chickens roasted for salads and sandwiches.  More grocery shopping today, cleaning, bed making and grass mowing  and I’ll be ready.

With so much going on I took the easy, peasy way with last night’s dinner.  Pizza dough and sauce were purchased at the local market and I added a simple topping of mozzarella cheese, diced bacon, sliced red onion, fresh tomatoes and a good sprinkling of fresh herbs.  A simple salad of butter lettuce and frizee with a blue cheese vinaigrette and a cold beer completed the menu.  So easy and so good!

Now THAT is one beautiful pizza. Just after 6:00 AM here on the west coast and I’m wishing I had your pizza for breakfast.

Having your family visit has me excited for you! I, too, love all the preparation in anticipation of the children arriving for a visit. Hope you have a little time to reflect on the good food prepared and waiting, the guest rooms ready and the lawn neatly trimmed. Enjoy!

*Drool* I can just close my eyes & imagine all that fresh tomato flavor! Can you believe I’ve NEVER had bacon on a pizza? I have to remedy THAT real quick.

I grew up in a predominantly Italian neighborhood & LOVED the pizza my best friend’s Mom made. I tasted the EXACT same pizza in Florance, Italy. Never have been able to duplicate it though. I keep trying. ;-)

I bought HUGE sweet onions today to make your potato dish from yesterday’s post. I think we’ll have it tonight with lamb chops on the grill.
Thanks for ALL the wonderful recipes & inspiration you provide, Cathy. We eat so much more interestingly now, because of you.

I love fresh tomatoes on a pizza. The first time I tasted a pizza with fresh tomatoes on it was in Salzburg, Austria many years ago and it came as such a surprise to me. This is an excellent idea for house guests Cathy. I know everyone must have loved it.

This is a lovely meal anytime! we have a little Italian deli inside of our farmer’s market that sells balls of pizza dough…and I love to pick them up for ease. Your pizza looks scrumptious :D

Great pizza Cathy! I love the addition of bacon and red onion; that must really add great flavor. My son would really love this, since he loves bacon on pizza and onion too! So happy to hear your family is visting with you. You must be really enjoying them:)
