Favorite Recipes Save The Day

Lemon Strawberry Crepes

 Gosh, what a week!   Life turned upside down ten days ago when my mother became very ill and ended up in the hospital.  She will celebrate her 90th birthday in a few weeks and has been in good health so an unexpected hospitalization threw us all into a tizzy.  I’m happy to report that she is doing better and life is settling down a bit.  My older daughter came from Chicago to help out and spend some time with her grandmother, and I managed to get enough kitchen time to make a few of her favorite dishes that I always make when she comes to visit.   I had time to do the cooking but taking photos was just too much so these pictures are from her last several visits home.

We all love crepes and strawberries are still in season so LEMON STRAWBERRY CREPES were on our weekend menu.  I made the crepes and lemon curd ahead of time so brunch went together quickly with very little mess.

GREEK CHICKEN PASTA SALAD is a perfect make ahead recipe when you are short on time.  I doubled the ingredients so a quick lunch or dinner was available between hospital visits.

Chicken Vesuvio

My daughter and SIL introduced me to CHICKEN VESUVIO when they took me to Danny’s Restaurant in Chicago on a visit several years ago.  This is one of our favorite one-pan chicken dishes and the leftovers are fantastic.  I thought I made extra but at the end of the meal there was only one lone potato wedge left in the pan.   This is a “must try” recipe and be sure to double or triple the sauce if you make it because it is THAT GOOD!

German Chocolate Cake

Homemade GERMAN CHOCOLATE CAKE has always been my daughter’s favorite dessert and I wasn’t going to disappoint her on this visit.  She loves it and I had to smile when I saw her cut a slice to go with her morning cup of coffee.

The past 10 days have been stressful and it helped to have a few of our favorite comfort foods in the fridge when we had time to sit down for a meal or had to get something on the run.  The crisis has passed for now and my mom is doing much better.  As frail as she is she bounced back like the energizer bunny. Way to go, Mom!

I am so sorry to hear that your mom was hospitalized but happy to know that she is doing better and that things have settled down for you. Don’t know how I missed the Chicken Vesuvio recipe but know that I will be trying it. Take care.

Very happy your mom is better! My mom is almost 90 and I always worry although she, too, is in pretty good health. Each of these recipes looks great but I have to make that Chicken Vesuvio! I am always looking for delicous and easy dishes like this for my family and that looks fantastic! And I have to make lemon crepes, too!

Cathy – So sorry your mom was in the hospital, but glad to know she’s doing better. My dad is also 90 and healthy, but you never know from one day to the next. All those comfort food recipes look like they made for a delicious time with your daughter and rest of the family.

I know what a parent being hospitalized is like…I am SO relieved to hear your mom is better now! I pray that she will continue to do improve.

Whew! So glad to hear that your mom is okay. What I wouldn’t give to have a family member who can cook and bake beautiful dishes like these. Sigh. I’m the only cook and baker in the family. That German Chocolate cake is a stunner. I’ve made your Chicken Vesuvio, and yes, it’s fantastic– and really quite easy to make. Wishing your Mutti a good recovery. Hugs, Debby.

I totally understand the tizzy caused by your mother being in the hospital. I was in that state for about 3 years when the unexpected occurred. As always your foodstuffs look terrific and I do enjoy trying some of the recipes.

Cathy, so sorry to hear about your mom. We had a similar situation this summer with Scott’s day who will also turn 90 this Fall so I know how it can throw your life into a tailspin! I’m so glad your mother is doing better Cathy. I know how hard it is so have a loved one in the hospital, but you sure have the food taken well care of. I’ve bookmarked a couple of these yummy looking dishes!

Glad to hear your mom is doing good. I know what a tizzy that can create, my MIL is turning 93 in just a few days, and we found our self at the hospital with her last month. She’s fine now too, but so stressful.
